Winter Potimarron Soup by Andrew Cotton
A cozy and hearty soup made from roasted potimarron squash, sweet potato, and other veggies blended with
broth for a velvety texture. Topped with soy or regular cream and crunchy homemade garlic croutons, it's
a perfect winter warmer, optionally served with orzo pasta.
INGREDIENTS:
- 1/2 Large potimarron squash
- 1 Large Sweet Potato
- 1 Onion
- 2 Potatoes
- 2 Garlic Cloves
- 3 Carrots
- Olive Oil
- Broth (vegetarian, beef, or chicken, depending on preference)
- Water (amount based on desired texture)
- Soy Cream (or regular cream)
- For the croutons: bread, garlic powder, salt, pepper, dried parsel, olive oil
DIRECTIONS:
1. Prepare the vegetables:
- Peel the potimarron, sweet potato, onion, potatoes,
garlic, and carrots.
- Cut all the vegetables into large chunks.
- Place them on a baking sheet lined with parchment
paper. Drizzle with olive oil.
2. Roast in oven:
- Roast the vegetables in the oven at 180°C (350°F) for
about 45 minutes. Keep an eye on them to make
sure they don’t burn.
3. Cook the soup:
- Once the vegetables are roasted, transfer them to a
large pot.
- Add broth (vegetarian, beef, or chicken) and enough
water to achieve your desired texture.
- Let it simmer on medium heat for 10 to 15 minutes.
4. Blend the soup:
- Blend the vegetables using an immersion blender until
smooth.
5. Make the croutons:
- Cut the bread into small pieces.
- Toss with garlic powder, salt, pepper, dried parsley,
and a drizzle of olive oil.
- Cook in the air fryer for 15 minutes.
6. Serve:
- Serve the hot soup with a spoonful of soy cream (or
regular cream) and freshly made croutons
straight from the air fryer. We like having this with orzo pasta !.
Roasted Bananas (Optional Dessert)
A simple, sweet treat of caramelized bananas roasted with maple syrup and coconut oil in the air fryer,
served warm with vanilla ice cream for a delightful finish to any meal.
INGREDIENTS:
- 4 to 6 Bananas (depending on size)
- Maple Syrup
- Coconut Oil
- Vanilla Ice Cream
DIRECTIONS:
1. Prepare the Bananas:
- Peel the bananas and cut them in half lengthwise.
- Place the banana halves on a baking sheet or tray that
fits into your air fryer.
2. Add the toppings:
- Drizzle the bananas with maple syrup and a bit of
melted coconut oil.
3. Air Fry:
- Set your air fryer to “roast” mode at 170°C (340°F) and
roast the bananas for 15-20 minutes, until they are golden and slightly caramelized.
4. Serve:
- Serve the roasted bananas with a scoop of vanilla ice
cream for a delicious dessert.
